How to make a homemade candy cane/gingerbread man
Grab your ingredients.
Your ingredients are 1 teaspoon butter, 1 cup sugar, 1 cup water, 1 cup light corn syrup, ¼ teaspoon cream of tartar, 1 teaspoon peppermint or spearmint extract, 6 drops red or green food coloring
Grease two baking sheets with butter, and in a large saucepan, bring the sugar, corn syrup, water, and cream of tartar to boil. Cook, without stirring until the candy thermometer reads 280 degrees
Stop the heat and then stir in the extract and food coloring. Then immediately pour onto prepared pans in 8-inch strips. Let it cool until it’s just enough to handle (about 1-2 minutes)
Then quickly roll each strip into 10-inch logs. Cut each into 5-inch lengths. Curve the top of each to form the handle of the candy cane. Keep it cool completely. Store it in a airtight container

How to make a homemade Gingerbread man.
Grab your ingredients
Your ingredients are 3 cups flour, 1½ teaspoons baking powder, ¾ teaspoon baking soda, ¼ teaspoon salt, 1 tablespoon ground ginger, 2½ teaspoons ground cinnamon, ½ teaspoon ground cloves, ¼ teaspoon freshly grated nutmeg, ½ cup of brown sugar, 1 egg, ½ cup of molasses, 6 tablespoons unsalted butter (softened), Zest of 1 lemon, 2 teaspoons vanilla, baking sheets, cookie cutters, Parchment paper, silicone mat or extra butter for greasing the baking sheet, and royal icing (optional)
Start with dry ingredients (In a large bowl or standing mixer, combine the dry ingredients: Flour, salt, sugar, baking soda, baking powder, salt and spices.)
Then add the wet ingredients (To the same bowl, add your butter, egg, brown sugar, molasses, vanilla and lemon zest. Mix until your dough comes together. Then it will become shiny and like play dough.
Then let it rest (Shape your dough into a log, wrap it in plastic wrap and let the whole thing rest at room temperature for 1 hour or you can leave it out for 8 hours if needed.
Then roll the dough (Working in 2 batches, roll out your dough with a rolling pin. It should be about ¼ inches thick. If the dough sticks to your rolling pin, then you can add a little bit more flour to the pin.
Then cut and bake the cookies. Using a cookie cutter, cut out gingerbread men from the dough. Place the cookies an inch apart on a baking sheet lined with either silicone, parchment paper or greased. Bake it 7-9 minutes (depends on the size of your cookies) at 375 degrees Fahrenheit.
Then you should cool the cookies completely on a wire rack before frosting no matter what shape you choose.
Then you can decorate! Use a small tipped pastry bag to make lines or whatever detailed pattern you want. Royal icing is the best choice because it becomes very firm when dry.
